Holiday 2000 Seaway Basketeers Potluck |
Ingredients:
- 8-10 cups torn red and green leaf lettuce
- 1 red delicious apple, chopped
- 1 Granny Smith apple, chopped
- 1/2 cup dried cranberries
- 1/2 cup toasted, sliced almonds
- 1/2 cup fresh, grated parmesan cheese
Dressing:
- 1 cup fresh cranberries
- 1/2 cup sugar
- 1/2 cup cider vinegar
- 1/4 cup apple juice concentrate
- 1 tsp. spicy brown mustard
- 1 tsp. fresh, grated onion, or 1/2 tsp. onion powder
- 1 cup canola oil
Instructions:
- In food processor, chop fresh cranberries.
- Gradually add remaining dressing ingredients, except oil.
- When well blended, transfer to container and add oil.
- Refrigerate at least 3 hours before serving.
- When ready to serve, stir or shake dressing well, and pour desired amount over salad.
