Recipe:   Merry Berry Salad

Event:   Holiday 2000 Seaway Basketeers Potluck

Ingredients:

  • 8-10 cups torn red and green leaf lettuce
  • 1 red delicious apple, chopped
  • 1 Granny Smith apple, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup toasted, sliced almonds
  • 1/2 cup fresh, grated parmesan cheese

Dressing:

  • 1 cup fresh cranberries
  • 1/2 cup sugar
  • 1/2 cup cider vinegar
  • 1/4 cup apple juice concentrate
  • 1 tsp. spicy brown mustard
  • 1 tsp. fresh, grated onion, or 1/2 tsp. onion powder
  • 1 cup canola oil

Instructions:

  • In food processor, chop fresh cranberries.
  • Gradually add remaining dressing ingredients, except oil.
  • When well blended, transfer to container and add oil.
  • Refrigerate at least 3 hours before serving.
  • When ready to serve, stir or shake dressing well, and pour desired amount over salad.
