Recipe:   Chinese Cabbage Salad

Event:   Holiday 2000 Basket Exchange and Potluck

Ingredients:

  • 2 T soy sauce
  • 1/2 C sugar
  • 3/4 C oil
  • 1/4 C vinegar
  • 2 pkgs ramen noodles, broken into pieces
  • 1/2 C slivered almonds
  • 1 oz sesame seeds
  • 2 bunches green onions
  • 1 1/2 pkg cole slaw mix or 1 medium head cabbage, shredded

Instructions:

  1. Mix soy sauce, sugar, oil and vinegar together in saucepan and boil 1 minute; cool.
  2. Saute noodles and almonds in butter, stirring occasionally, until lightly browned. Add sesame seeds toward the end, as they brown very quickly. Cool.
  3. Cut green onions and mix with cabbage.
  4. Assemble ingredients at serving time. (Best if put in bowl with lid; shake to mix.)
