Ingredients:

• 7 eggs, separated
• 2 tsp. grated lemon peel
• 1/4 tsp. salt
• 1 1/2 cup powdered sugar
• 1 C flour

Instructions:

• Preheat oven to 325.
• Beat egg yolks and lemon peel until frothy; set aside.
• Beat egg whites and salt until foamy; slowly add sugar and beat until egg whites begin to stiffen.
• Gently fold egg white mixture into egg yolk mixture.
• Sift flour directly into bowl and fold.
• Pour into ungreased 10" tube pan.
• Bake 30 to 40 minutes.
• When cool, sprinkle with powdered sugar or glaze with vanilla frosting.
