Microwave Peanut Brittle |

Ingredients:
- 1 C sugar
- 1/2 C white corn syrup
- 1 C salted, roasted peanuts
- 1 tsp. butter
- 1 tsp. vanilla
- 1 tsp. baking soda
Instructions:
- Stir together sugar and corn syrup in a 1-1/2 qt. casserole; microwave on high for 4 minutes.
- Stir in the peanuts and microwave 3 to 5 minutes, or until light brown.
- Add the butter and vanilla; blend well and microwave 1 to 2 minutes more. (It will be VERY HOT!)
- Add the baking soda; stir gently until foamy.
- Pour onto a lightly greased cookie sheet; let cool 1/2 to 1 hour.
- When cool, break into pieces and store in an airtight container.
