Recipe:   Microwave Peanut Brittle

Event:   Holiday 2001 Basket Exchange and Potluck

Ingredients:

  • 1 C sugar
  • 1/2 C white corn syrup
  • 1 C salted, roasted peanuts
  • 1 tsp. butter
  • 1 tsp. vanilla
  • 1 tsp. baking soda

Instructions:

  1. Stir together sugar and corn syrup in a 1-1/2 qt. casserole; microwave on high for 4 minutes.
  2. Stir in the peanuts and microwave 3 to 5 minutes, or until light brown.
  3. Add the butter and vanilla; blend well and microwave 1 to 2 minutes more. (It will be VERY HOT!)
  4. Add the baking soda; stir gently until foamy.
  5. Pour onto a lightly greased cookie sheet; let cool 1/2 to 1 hour.
  6. When cool, break into pieces and store in an airtight container.
