Recipe:   Merry Berry Cheese Bars

Ingredients:

  • 2 C flour
  • 1-1/2 C oats
  • 3/4 C brown sugar
  • 1 C margarine
  • 8 oz. cream cheese
  • 1 can (14 oz.) Eagle Sweetened Condensed Milk
  • 1/4 C lemon juice
  • 16 oz. can whole berry Cranberry Sauce
  • 1 T. brown sugar
  • 2 T. corn starch

Instructions:

  1. Preheat oven to 350.
  2. Beat flour, oats, margarine, and 3/4 C brown sugar together with mixer, until crumbly.
  3. Set aside 1-1/2 cups and press the remaining into the bottom of a greased 13x9" pan; bake 15 minutes.
  4. With mixer, beat cream cheese until fluffy.
  5. Add condensed milk and lemon juice; spread over baked crust.
  6. Combine cranberries, corn starch, and 1 T brown sugar; spoon and spread over cheese mixture.
  7. Top with reserved crumbs; can also add chopped nuts to reserved crumb topping, too.
  8. Bake 45 minutes.
  9. Refrigerate any leftovers.

Makes 24 - 36 bars.
