Cashew Vegetable Medley |

Holiday 1998 Basket Exchange and Potluck |
Vegetable Ingredients:
- Florets from 2 stalks of broccoli
- 1 green pepper, sliced
- 1/4 to 1/2 red sweet onion, sliced
- 1 C cashews
- 1 pkg. (1 lb.) baby carrots, sliced in half lengthwise
- 2 small (4 - 6 " long) yellow summer squash, sliced
- 6 oz. (about 8 medium) mushrooms, sliced
- salt and pepper to taste
Sauce Ingredients:
- 2 T soy sauce
- 2 T white wine worcestershire sauce
- 1/2 C packed brown sugar
Instructions:
- Combine vegetable ingredients together.
- Stir together sauce ingredients and pour mixture over vegetables.
- Stir several times at intervals.
- Marinate in refrigerate several hours, or overnight.
