Recipe:   Cashew Vegetable Medley

Event:   Holiday 1998 Basket Exchange and Potluck

Vegetable Ingredients:

  • Florets from 2 stalks of broccoli
  • 1 green pepper, sliced
  • 1/4 to 1/2 red sweet onion, sliced
  • 1 C cashews
  • 1 pkg. (1 lb.) baby carrots, sliced in half lengthwise
  • 2 small (4 - 6 " long) yellow summer squash, sliced
  • 6 oz. (about 8 medium) mushrooms, sliced
  • salt and pepper to taste

Sauce Ingredients:

  • 2 T soy sauce
  • 2 T white wine worcestershire sauce
  • 1/2 C packed brown sugar

Instructions:

  1. Combine vegetable ingredients together.
  2. Stir together sauce ingredients and pour mixture over vegetables.
  3. Stir several times at intervals.
  4. Marinate in refrigerate several hours, or overnight.
