Make-Ahead Potatoes |

Holiday 1998 Basket Exchange and Potluck |
Ingredients:
- 10 large potatoes, peeled
- 1 C (8 oz.) sour cream
- 8 oz. cream cheese
- 6 T. butter
- 2 T. dried minced onion
- 1 tsp. salt
- paprika
Instructions:
- Cook potatoes.
- Mash potatoes with sour cream, cream cheese, 3 T butter, minced onion, and salt.
- Put in greased pan.
- Drizzle remaining 3 T. butter on top.
- Sprinkle with paprika.
- Refrigerate, or bake immediately at 350 for 40 minutes, covered; uncover and bake an additional 20 minutes. (If refrigerated, let stand at room temperature 30 minutes before baking.)
Makes 12 servings.
