Recipe:   Make-Ahead Potatoes

Ingredients:

  • 10 large potatoes, peeled
  • 1 C (8 oz.) sour cream
  • 8 oz. cream cheese
  • 6 T. butter
  • 2 T. dried minced onion
  • 1 tsp. salt
  • paprika

Instructions:

  1. Cook potatoes.
  2. Mash potatoes with sour cream, cream cheese, 3 T butter, minced onion, and salt.
  3. Put in greased pan.
  4. Drizzle remaining 3 T. butter on top.
  5. Sprinkle with paprika.
  6. Refrigerate, or bake immediately at 350 for 40 minutes, covered; uncover and bake an additional 20 minutes. (If refrigerated, let stand at room temperature 30 minutes before baking.)

Makes 12 servings.
